Cheesy Spinach and Artichoke Stuffed Chicken
Ingredients:
– 4 boneless, skinless chicken breasts
– 1 cup frozen spinach, thawed and drained
– 1 can artichoke hearts, drained and chopped
– 1 cup shredded mozzarella cheese
– 1/2 cup grated Parmesan cheese
– 1/2 cup mayonnaise
– 2 cloves garlic, minced
– Salt and pepper to taste
Step-by-step instructions:
1. Preheat oven to 375°F (190°C).
2. In a mixing bowl, combine spinach, artichoke hearts, mozzarella cheese, Parmesan cheese, mayonnaise, garlic, salt, and pepper.
3. Cut a pocket into each chicken breast, being careful not to cut all the way through.
4. Stuff each chicken breast with the spinach and artichoke mixture.
5. Place stuffed chicken breasts in a baking dish.
6. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
